Peach Cobbler Muffins

1 3/4 cups all purpose flour

3 tbls sugar

2 1/2 tsp baking powder

1/4 tsp salt

1 egg, large

1/3 cup butter melted

2/3 cup milk

1/2 cup Carol Hall's Peach Cobbler Jam

1 1/2 tsp grated lemon rind



Preheat oven to 400 F.

Grease the bottom of 12 regular muffin tins. Put all of the dry ingredients (flour, sugar, baking powder and salt) in a large mixing bowl, set aside.

In another bowl, combine egg, milk, melted butter, Carol Hall's Peach Cobbler Jam and lemon rind.

Pour the wet ingredients into the dry ingredients and stir until dry ingredients are moist. The batter will be lumpy. Fill the muffin cups 2/3 full and bake for 20 minutes.
