Peach Cobbler Muffins

  • 1-3/4 cup All purpose flour
  • 3 T Sugar
  • 2-1/2 t Baking Powder
  • 1/4 t Salt
  • 1 Egg
  • 1/3 cup Butter, melted
  • 2/3 cup Milk
  • 1/2 cup Carol Hall’s Peach Cobbler Jam
  • 1-1/2 t Zest from one lemon

Preheat oven to 400 degrees.  Grease the bottoms of 12 regular muffin cups or use paper cupcake liners in a muffin tin.  Combine all of the dry ingredients in a large mixing bowl (flour, sugar, baking powder, and salt).  Set aside.  In another bowl combine egg, melted butter, milk,  Carol Halls Peach Cobbler Jam, and the lemon zest.   Pour the wet ingredients into the dry ingredients and gently mix just until combined (batter will be lumpy).  Fill muffin sups 2/3 full.  Bake for 20 minutes or until a knife inserted into one of the muffins comes out clean
